Frustrating appointments make healthcare access difficult

I've been registered with this medical practice and thankfully haven't needed to use their services extensively. However, their current appointment system is absolutely frustrating. You endure lengthy waits only to be told you can't book directly with the receptionist, despite clear available slots. Instead, they insist on sending a message requiring you to complete a form and await a callback. How does this make any sense? I'm standing right here, speaking to a real person, yet I'm being directed to a convoluted process when appointments are visibly open. Before the pandemic, patients could easily book online themselves, which was far more straightforward and efficient. Why can't we return to that method? This current system is clearly not working and I'm confident most patients would agree. Let me be clear - the doctors and reception staff are excellent, but the surgery manager needs to seriously reconsider this appointment booking process, which is frankly ridiculous and overcomplicated.
